The team at the Gastro Bar & Grill have been put together with careful thought and consideration. Our aim is to make your drinking and dining experience with us as pleasing and enjoyable as possible.

  • Darren Smith - Head Chef

    Darren began his studies at Southport College in 1996 where he was awarded Student of the Year. He commenced his career at an award winning restaurant in 1998 and in 2001 was bestowed with the titles “Northwest” and “Merseyside Young Chef of Year”.

    Darren has a great passion for what he does. He has a wealth of experience, spanning over 12 years and talent for combining different flavours that work. He is dedicated to producing great food and we can guarantee that you will enjoy his efforts.

  • Marco Camacho - Restaurant Manager

    Marco originates from Madeira where he began his hospitality career in the finest establishments, progressing rapidly through the ranks. He then moved to England and has worked at some of the most prestigious restaurants in the region, including West Tower and Café Del Mar.

    Marco and his team are dedicated to providing great service to all of our customers.

  • Fabio Dalle Mulle - Assistant Manager

    Being of Italian descent, the hospitality industry has always been foremost in Fabio’s family life and he realised from a young age that he wanted a career as a professional in the restaurant industry. At the age of 19 he accepted the role of Assistant Manager in the thriving Bollicine Restaurant.

    Within a year Fabio accepted the offer to work in Verona’s most prestigious restaurant – Ristorante Maffei. Serving in such a renowned, quality restaurant gave him the opportunity to gain critical experience in a fine dining establishment.

    Fabio will demonstrate his passion for great food, fine wine and provide our guests with an unforgettable experience time and time again.
